Pickled Egg Recipes add Pizazz to your Meals

Pickled egg recipes can be fun to prepare and eat. They are especially healthy when you use pastured poultry eggs. They are versatile, inexpensive and add zip to daily or holiday meals.

Onion Flavored

Ingredients:

2 dozen pastured poultry eggs
1/2 Qt. vinegar
1 1/2 Tbsp sugar
1/2 tsp salt
1 onion

Preparation:

Boil pastured poultry eggs hard for 7 minutes. Shell the eggs. Put in jars and pour the ingredients over them. Add sliced onion on top.

Set for 5 or more days.



Peppercorn Delight

Ingredients:

1/2 cup water
1 1/2 cup white vinegar
1 tsp salt
1 tsp peppercorns
1 onion, sliced
1 dozen pasture poultry eggs

Preparation:

Boil water, vinegar, salt and peppercorns together for about 1 minute. Pour over peeled hard boiled eggs in quart jars. Add sliced onion on top. Cover with canning lids and bands.

Let set overnight in refrigerater.
