Fruit and Lamb Exotica



The combination of tender grassfed lamb, onions, garlic, and fruits makes an exotic and delicious crock pot recipe. Lamb cubes can be cut from any part of lamb or use lamb stew meat.

INGREDIENTS:
2 lbs grassfed lamb cubes, about 1 inch square
1 tsp. crushed red pepper
1 tsp. cinnamon
1 tsp. salt
2 Tbsp. olive oil
2 onions, chopped
4 cloves garlic, minced
14 oz. can condensed beef broth
1/2 cup water
1 Tbsp. cornstarch
2 Tbsp. cold water
1 cup pitted dates, chopped
1 cup dried apricots, chopped
1 apple, chopped

DIRECTIONS; Combine red pepper, cinnamon and salt and blend. Coat lamb cubes with this spice mixture.

In large skillet, heat olive oil and saute coated lamb. Use more than 1 skillet or saute 1/2 at a time.

As the meat is browned, transfer it to crockpot. When all meat is browned, stir onion and garlic into crock pot. Pour beef broth and 1/2 cup water over all. Cover and cook on low for 7-9 hours until meat is tender.

Skim fat from juices, if necessary. Grassfed lamb generally has very little fat. Combine cornstarch and 2 Tbsp. cold water in a small bowl and mix well. Stir into crock pot. Add dates, apples and apricots to crockpot and stir well. Cover and cook on high for 30-40 minutes until mixture is thickened.

Serve over hot cooked rice or noodles. This crock pot recipe will make 6-9 savory servings.

Overnight Beef Stew



½ pound baby carrots
3 full stalks of celery, cut up
½ pound baby carrots
1/8 teaspoon fennel
2 quarts water (or enough to fill a crock pot half full)
1-2 pounds beef, cubed
3 medium potatoes
¼ onion
¼ teaspoon parsley
1 clove garlic, diced
2 envelopes beef stew mix
flour
oil

Brown meat in flour and oil. Fill the crock pot half full of water. Drain oil from meat and add to crock pot, cooking on medium to low heat overnight.

Next morning add spices, vegetables and beef stew mix. Add water until almost full and stir in mix. Cook on high until boiling, then turn down heat to low and simmer until just before serving.

The obvious advantage of crock pot recipes like this overnight stew is that you can prepare in advance. Crockpot recipes can be ready and waiting when you want them.

Crock Pot Chicken Breasts


4 boneless chicken breasts, preferably from pasture-raised chicken
Salt and pepper
Paprika
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup grassfed sour cream
¼ cup flour
1/3 cup water

Place pastured chicken breasts in crock pot. Sprinkle with salt, pepper and paprika. Mix soups, sour cream, flour and water. Pour over chicken. Cook on slow 6-8 hours (200ºF) or cook on high 3 hours (300ºF). Serve over mashed potatoes, rice or noodles.



Marilee’s Original Beef Stew

In crock pot add:
3 cups water
½ teaspoon basil
½ teaspoon thyme
½ teaspoon cumin
3 medium potatoes
½ to ¾ pounds grassfed beef stew meat
4 beef bouillon cubes
¼ cup chopped onion
1-2 carrots
1 stalk celery (optional)

Cook on high for 2 hours and on medium for 1 hour. Check meat and serve.

Like most all crock pot recipes, this one is "forgiving". No matter how you vary the ingredients, it always seems to taste good!

Serves: 4



Crock Pot Dinner Recipe

3/4 pound grassfed bacon
1 cup chopped onion
1 pound grassfed hamburger
1-15-1/2 ounce can pork & beans
2 cups cooked kidney beans
1/2 cup catsup
1/2 cup French dressing
1 cup brown sugar
3 Tablespoons vinegar
1 Tablespoon liquid smoke
3/4 teaspoon salt
Dash pepper

Fry the bacon until crisp, break in pieces. Brown the onions and hamburger. Drain. Put in crock pot with rest of ingredients on low for 2 1/4 hours


Scrumptious Beef Sandwiches

1 tablespoon dried minced onion
1 teaspoon salt
2 teaspoons garlic powder
2 teaspoons dried oregano
1 teaspoon dried, crushed rosemary
1 teaspoon caraway seeds
1 teaspoon dried marjoram
1 teaspoon celery seed
1/4 teaspoon cayenne pepper
1 boneless grassfed beef chuck roast (3-4 lbs.)
8 to 10 sandwich rolls, split

Combine seasonings, rub over roast. Place in a crock pot or slow cooker. Cover and cook on low for 6-8 hours or until meat is tender. (No liquid needs to be added to this crock pot recipe; the moisture comes from the roast.) Shred with a fork. Serve on rolls.

Serves 8-10 healthy appetites.

Crock pot recipes can take the pressure off the cook. Prepare the ingredients, plop 'em in the pot--and the day is yours!
