Spiced Pickled Eggs

Ingredients:

2 tsp crushed peppercorns
2 tsp roughly crushed allspice berries
2 tsp ground ginger
1 tsp salt
4 cups herb vinegar
16 pastured poultry eggs

Directions:

Put the seasoning in a bit of muslin and tie into a little bag with string. Pour vinegar into a saucepan and add the spice bag. Bring to a boil and simmer for 20 minutes in a covered pan. Turn off heat. Let stand for 2 hours, then remove spice bag.

Boil the eggs for at least 8 minutes. Place the cooked eggs in cold water to cool, then carefully remove the shells.

Place the eggs in jars, pour on the cold spiced liquid, and seal with airtight lids.

Leave for 30 days before opening.



Orange Spiced Eggs

Ingredients:

8 hard boiled pastured poultry eggs
1 1/2 cups white vinegar
1/4 cup water
1 can (8 oz) frozen orange juice concentrate
1 cinnamon stick, broken to pieces
8 crushed cloves

Directions:

Arrange eggs in 1 quart jar with tight-fitting lid.

In medium saucepan, stir together all ingredients. Bring to boil. Reduce heat and simmer 5 minutes.

Pour hot mixture over eggs. Cover tightly. Let set for 1 hour. Refrigerate to blend flavors for several days to several weeks.

Spicy Pickled Eggs

1 dozen pastured poultry eggs
1 cup white vinegar
1/2 cup water
1 medium onion, coarsely chopped
1 clove garlic
20 whole cloves
1 tsp salt
1 tsp pepper
1 tsp dry mustard
1 tsp pickling spice

Hard boil pastured poultry eggs, plunge them in cold water, remove shells and place in a sterilized jar.

Heat vinegar and water. Add seasonings and pour the mixture over the eggs.
