Grassfed Bison Recipe for Roast

Our neighbor, Lindall Winter, raises buffalo between Muscatine and Blue Grass, here in Iowa. (If you're in the area, you can purchase meat from his store. If you need to order steaks online, scroll down.) What a sight to see his herd of huge and fascinating bison roam the hills. Unless you're there you can't imagine how big and how powerful these animals really are. Somehow it all transports me back to a former time zone. . .I feel I'm back in Indian country.

Ingredients:

3-4 pound grassfed bison roast
salt to taste
freshly ground peppercorn to taste
2-3 Tbsp oil (preferably olive oil as it is healthier than most vegetable oils)

Procedure:

Lightly oil a heavy skillet. Place roast in skillet and brown on all sides.

Remove roast, insert meat thermometer into thickest part of roast. Avoid sticking the probe into either fat or bone. Place roast into roasting pan. Cook until desired temperature is reached. For rare use 120-130 F; for medium rare use 130-140 F. Cooking at these temperatures ensures the meat will remain tender and juicy. Grassfed meat need not be cooked to higher temperatures.

Do not overcook. As you know from reading other pages on this site, grassfed meat cooks faster than the usual grain-fed cut of meat. That’s because grassfed meat has less fat and fat acts as an insulator requiring a longer cooking time. Any grassfed meat will turn out tough and dry if cooked too long. I have found this is especially true of bison because bison has so little fat.

After removing roast from oven, let stand for about 15-20 minutes. Tasty gravy can be made from drippings in bottom of roasting pan. Serve with potatoes and vegetables.


Easy Crockpot Grassfed Bison Recipe


Here's one of the many crockpot grassfed bison recipes that's easy to prepare. It's also super tasty.

Ingredients:

3 lbs. grassfed Bison roast
1-2 cups water
1 medium onion
3 stalks celery
6-8 large carrots
1 cup of sliced fresh mushrooms
salt & pepper to taste

Procedure:

Lightly oil crock pot. Put vegetables in crock pot. Add meat, seasoning & water. Cook on low 8-10 hours or until tender.



Old-fashioned Bison Stew Recipe

Ingredients:

Bison stew meat, cubed
Onions, chopped
Potatoes
Carrots or turnips
Seasoning

Procedure:

Lightly oil large pan
Brown the grass-fed bison meat in pan
Cover with water
Put in the onions, potatoes, carrots or turnips
Add seasoning
Cook SLOWLY on LOW heat until meat is tender and done.

One of our visitors wrote, "no specific measurements, no thickener." That's true. Remember, however, this is an Old-fashioned Bison Stew Recipe, not a modern one. Didn't your Grandma cook without specific measurements? So did mine. Yet the visitor is right. For us moderns a thickener such as flour could help. I appreciated his comment.
