Easy Pickled Eggs

Ingredients:

8-9 hard boiled pastured poultry eggs
1 can (16 oz) sliced beets
1 3/4 cup distilled vinegar
1 cup sugar
1 1/2 Tbsp whole allspice
1 stick cinnamon halved

Directions:

Pour juice off beets. In saucepan, stir together beet juice, vinegar, sugar and spices. Bring to boil, stirring until sugar is dissolved.

Simmer 5 minutes on reduced heat.

Place eggs in 1 quart jar with tight-fitting lid.

Pour hot mixture over eggs. Cover tightly.

Allow to cool at room temperature 1 hour. Refrigerate to blend flavors at least 8 hours or up to several weeks.

A Bright Red Recipe

Ingredients:

1/2 dozen boiled pastured poultry eggs
1 can sliced red beets with juice
1 cup white vinegar
1 cup water
1 Tbsp pickling salt
1 Tbsp sugar

Directions:

Boil pastured poultry eggs 3 minutes. Let stand in same water until cool enough to touch. Peel.

Combine vinegar, water, beets with juice, salt and sugar in sauce pan. Bring to a boil and remove from heat.

Add eggs and place in a cool, dark space for 24 hours. Cover and refrigerate 1 week or more.
