Cheap, Cheap Chicken Recipes


How are a chicken and a thrifty wife alike?
Both go "Cheap, cheap" when food hunting.

Chicken recipes help solve the money problem. Compared to fish, veal, lamb, beef and pork, chicken may be the cheapest to prepare and serve. These chicken recipes will help stretch your food dollars.




Chicken Salad

2 cups diced, cooked pastured-poultry chicken
1 cup diced celery
1 cup grated carrots
1 box shoestring potatoes
1 cup salad dressing
1 small onion, diced
1/2 cup almonds

Mix chicken, celery, carrots, salad dressing, onion. Stir in nuts and shoestring potatoes.




Chicken Wings

20-25 wings
1 cup soy sauce
1/4 cup sugar
1/4 cup pineapple juice
1/4 cup corn oil
1 teaspoon garlic powder
1 teaspoon ground ginger

Mix all ingredients; add enough water to cover chicken wings. Cut wings and pour sauce over wings, marinate overnight. Bake at 350 for 45 minutes or until meat readily falls off bones.


These first 2 chicken recipes--a chicken salad and a chicken wings recipe--are tasty, and at the same time really "cheap, cheap"!

Cherry Skillet Chicken


1 cup cherry preserves
2 Tablespoons lemon juice
4 whole cloves
1/4 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon mace

Mix together and set aside.

1/2 cup flour
1 teaspoon salt
2 1/2-3 pound grassfed (pastured) chicken, cut up
1/4 cup salad oil

Combine flour and salt in a bag. Add chicken pieces a few at a time. Shake until coated. Repeat until all pieces are coated. Brown chicken on all sides in medium heat. Cover and cook 15 minutes. Drain off fat. Add cherry sauce, cover and simmer over very low heat, skin side up for 15 minutes. Turn and simmer another 10-15 minutes or until tender.


Most men love a frugal wife and a full meal. Well chosen chicken recipes provide both!

Chicken Crunch Recipe

1/2 cup chicken broth or milk
1 cooked chicken, diced
1-5 ounce can water chestnuts
1/2 cup toasted almonds
2 cans cream of mushroom soup
1 cup diced celery
1-3 ounce can Chow Mein noodles
1/2 cup pineapple tidbits

Blend broth into soup. Mix in remaining ingredients, except for almonds. Layer it with noodles. Sprinkle almonds on top.



Chicken Divan Recipe

1- 10 ounce package frozen broccoli, chopped
4 boneless pasture-raised chicken breasts
1 can cream of chicken soup
1/4 teaspoon curry powder
1/2 teaspoon lemon juice
1/2 cup mayonnaise
1/2 cup grated cheddar cheese

Put chicken in a pot of water and bring to a boil. Reduce heat and simmer 1 hour. Cook broccoli until just softened. Line buttered casserole dish with cooked broccoli. Place cooked chicken on top of broccoli. Mix soup, mayonnaise, curry, and lemon juice. Pour mixture on top of chicken. Cover with cheese. Bake at 350 degrees for 25 minutes.

Serves 4

Chicken à l'Orange

1 pasture-raised chicken, cut up
1/4 cup cooking oil
1/4 cup flour
1 cup orange juice
1/2 cup chili sauce
1/4 cup chopped green pepper
1 teaspoon prepared mustard
1/2 teaspoon garlic salt
2 Tablespoons soy sauce
1 Tablespoon molasses

Wash and dry "pastured poultry” chicken pieces. Season with salt and pepper. Dredge with flour. Heat oil in skillet, add chicken and lightly brown on all sides. Remove chicken and place in a 3-1/2 quart casserole or baking dish. Drain fat from skillet and add remaining ingredients. Simmer for 2 to 3 minutes. Pour sauce over chicken. Cover and bake at 350 degrees for 50 to 60 minutes.

Serves 4, but is easily doubled.


Chicken Singh

2-1/2 pounds pastured chicken, cut in quarters
2 sliced onions
1 clove garlic, chopped
1/2 cup tomato sauce
3/4 teaspoon turmeric powder
1 peeled fresh tomato, chopped
1 Tablespoon lemon juice
1/2 cup water
salt and pepper
3 Tablespoons butter

Melt butter in large skillet and add the chicken. Add the onions and the garlic, slowly browning together. When browned, add remaining ingredients and simmer until tender, basting. Uncover and cook to reduce sauce a bit. Serve with rice.

This is a versatile chicken recipe. Turkey or even pork may be substituted for chicken.

Chili Chicken Recipe

2 tomatoes
1 onion (medium)
2 cloves garlic
1 can mild chilies
1/4 cup cilantro
1 teaspoon cumin
2 cans chicken broth
1/4 teaspoon salt
1 teaspoon sugar
dash pepper
1 pound boneless/skinless pasture raised chicken, cubed into 1/2 inch pieces.

Puree first 6 ingredients and combine in a large saucepan with next 4 ingredients. Bring to a boil, then lower heat and simmer. Add to saucepan 1 pound cooked chicken. Simmer all ingredients 30 minutes uncovered; stir occasionally so it won't stick.

Serve with warm flour tortillas, over burritos, or in a bowl with grated jack cheese.


Chicken Breasts with Potato Stuffing

1 large chopped onion
1 cup chopped celery
4 cups mashed potatoes
4 boneless grassfed chicken breasts
1 teaspoon salt
1/2 cup chopped parsley
3/4 cup butter or margarine
2 pastured poultry eggs, slightly beaten
1/4 teaspoon paprika
Butter
1/4 teaspoon pepper

Sauté onion in 1/2 cup of the butter until just tender. Add potatoes. Stir in eggs, stuffing, parsley, salt and pepper. Turn into greased shallow baking dish. Arrange breasts on top of stuffing. Brush with 1/4 cup melted butter. Sprinkle with paprika and a little salt and pepper. Bake at 350 degrees for 35 to 40 minutes or until chicken is tender and brown.

Serves 8

Baked Barbecued Chicken


Whole free-range chicken, cut up
Flour
Salt & pepper to taste
3/4 cup chopped celery
1 cup water
2 Tablespoons Worcestershire
1 Tablespoons brown sugar
1 large sliced onion
1 cup catsup

Dip chicken parts in flour, salt and pepper, and brown in skillet with hot oil. Remove from skillet. Add onion and celery to skillet and cook until onion is brown. Add rest of ingredients to skillet and simmer for 3 minutes. Place chicken in casserole dish or 9 X13 pan. Pour contents of skillet over the top of chicken. Cover and bake at 350 degrees for 1 hour. Sauce may be spooned over mashed potatoes. Sauce recipe may be doubled.


Fried Chicken

Of the oodles of chicken recipes in the world, fried chicken is probably the traditional favorite. Yet this one has a non-traditional surprise.

1 pasture-raised chicken
4 garlic cloves
1 grassfed egg, beaten
seasoned bread crumbs
dash of salt and pepper
oil
1 cup cooking wine
dash of oregano
dash of parsley

Cut garlic cloves in half. Put in frying pan with 1/4 inch oil. Dip pasture-raised chicken in egg, bread crumbs and egg again. Place in frying pan with boiling oil. Sprinkle salt and pepper on the side facing up. Lightly brown. Remove chicken and garlic from pan. Put in a baking dish and cover with oil from pan. Top with spices. Add wine. Cover and bake at 350 degrees for 30 minutes. Remove cover and bake for 15 minutes more.




Chicken and Pork Chow Mien

1 large chicken grass-fed breast, fried
2 or 3 pounds pork roast
1/2 to 1 pound sliced mushrooms
5 thick sliced onions
6 or 7 stalks celery, chopped into 1 inch pieces
1/4 pound butter
2 cups water
La Choy bean sprouts, drained
1/2 Tablespoon molasses
1 teaspoon Kitchen Bouquet
3 cans La Choy chow mien noodles
salt and pepper to taste

Brown mushrooms in butter. Remove. Cut pork into small thick pieces, add to butter and brown. Cook browned meat in covered pan with water, salt, and pepper. Simmer 30 minutes. Add onions, celery, bean sprouts, mushrooms, molasses, and Kitchen Bouquet. Cook 15 to 20 minutes. Add chicken. Thicken with cornstarch and cook a little longer. You may sprinkle toasted almonds over top if desired.

Serves 12 over heated noodles.

The variety of chicken recipes is, of course, never ending. If you want to switch to a different taste, try these pork chop recipes.

Hot Chicken Recipe

4 slices bread
1/2 cup mayonnaise
1 cup chopped green pepper
3 cups milk
1 can cream of mushroom soup
Paprika
2 cups of cooked cubed pastured chicken
1 cup chopped onion
1 cup chopped celery
4 grassfed eggs
cheese

Trim crust from 4 bread slices, dice and place into 8 X 12 baking dish. Mix rest of ingredients together and pour over bread. Mix 3 cups grassfed milk and 4 pastured poultry eggs. Pour over mixture.

Refrigerate overnight or at least 3 to 4 hours. Bake 15 minutes at 325 degrees. Spoon 1 can mushroom soup over top. Top with grated cheese. Sprinkle with paprika. Return to oven and bake 45 minutes to 1 hour. Let stand 5 minutes before serving.

For larger dish, you will need 1-1/2 times the amount of bread and 5 top ingredients and 2 cans of soup. Also, increase first baking time to 30 to 40 minutes.

Hot Chicken Brunch Casserole

Simmer together for 30 minutes, then set aside to cool:
4 grassfed chicken breasts
1 cup water
1 bay leaf
5 celery leaves

Mix together:
2 cups celery, chopped
1 cup water chestnuts, sliced,
1/2 cup mushrooms, sliced
1/2 cup slivered almonds
2 Tablespoons minced onion
1/2 can cream of chicken soup
1 cup mayonnaise
1 cup sour cream
2 Tablespoons lemon juice
Salt and pepper to taste

Chop grassfed chicken and toss in large bowl with above mixture. Spread into a 9 x 13 inch baking dish.

Top with:
1 cup shredded cheddar cheese
1 cup fried onion rings
Bake in a 350 oven for 30 minutes.
Serves 8-10

A Word About Pastured Poultry (Grassfed Chicken)

Chicken and chicken recipes. We all seem to love lip-smackin' chicken recipes. Yet where do we find pasture raised poultry to fulfill the true flavor of grassfed chicken? First of all, these chicken recipes will work with any chicken you can raise or buy. They are just healthier and better tasting if you can locate free-range chicken from a local farmer or natural food store.

You might try a local farmer's market. Ask for pastured poultry, open-ranged or free-ranged chicken, or grassfed chicken. Chickens cannot live on grass alone, however, so some grain needs to be provided for healthy poultry. Ask the farmer how big a range the birds have. Just giving them access to the out-of-doors is not enough. For the full health and taste benefits of these chicken recipes, the birds you select should have feasted on grass or legumes for at least the last 90 days before slaughter.
