Rub the roast well with seasonings and let stand at room temperature. Place in roasting pan with rib side down. Put in cold oven. Roast for 1 hour at 375°F. Turn off oven until ½ hour before serving. Again turn oven to 375°F for 30 minutes. IMPORTANT: Do not open the oven door from time you put the roast in until ready to eat. Roast will be beautifully brown on the outside and rare on the inside. If a less rare roast is desired, the temperature should remain the same, but the final reheating time may be increased by 10 minutes.

Old Fashioned Prime Rib Roast Recipe

Thaw roast and bring to room temperature.Pre-heat oven to 350°.Season to taste with salt and pepper.Insert meat thermometer into thickest part of roast. As you know, the most accurate readings come when the thermometer is inserted into the thickest part of the roast and not touching any bone. Set the roast on a rack, fat side up, in a roasting pan. Transfer to oven. Roast in oven until the thermometer reads 120° for rare, 140° for medium.

Place seasoned prime rib roast in pre-heated 350° oven for one hour. Turn oven off, leaving the roast in. No need to check it. It won't escape. For an evening supper, start at 3:00PM. Place roast in oven and cook for 45 minutes at 325°F. Turn oven off completely. Do not cover or add water. Do not open the oven door. Forty-five minutes before serving, turn oven to 300°F.
