Venison Rub Recipe Creates Dinnertime Buzz

Venison Rub Recipe for Cooking Venison Roast--



Ingredients:

1/3 cup ground horseradish
2 Tablespoons lemon juice
1/3 cup soft butter

Procedures for venison rub with venison roast recipe:

Select a 4-5 pound venison roast (I used a shoulder roast.) Remove all fat. Score roast every inch. Sprinkle salt and pepper over roast.

Combine all rub ingredients in mixing bowl. Rub mixture onto all sides of roast. Place meat in roasting pan. Pre-heat oven to 325° F. Use a meat thermometer and cook to 140° F rare, 155° F medium, 170° F well-done.

Remove from oven, cover with foil and let stand for 15 minutes before serving. Serves 8-10.
