Bison Steaks --How to Cook and Where to Buy Buffalo Meat Online

Bison steaks delight the palate.

Braised Bison Steaks


1/4 cup flour
1/2 tsp salt
1/8 tsp pepper
4 grassfed buffalo steaks, 3/4" thick
2 Tbsp fat
1 1/4 cups water, tomato juice or Sauternes wine
2 Tbsp flour
3 Tbsp cold water


Combine flour, salt, pepper. Coat chops with the flour mixture. Melt fat in heavy fry pan. Add steaks; sauté until well browned on both sides. Add liquid, then cover and simmer for about 45 minutes or until meat is tender. Remove steaks to hot platter; remove pan from heat.

Combine flour and cold water to make paste; add 1/4 cup liquid from pan to paste. Stir paste into remaining liquid. Return to heat, stirring constantly until gravy bubbles. Add seasoning to taste; pour over steaks. Serves four.

Try one of these variations.

1. Use half sour cream, half water for liquid. (This is a particularly tasty variation!)
2. Add sautéed mushrooms to the gravy. (Ideal for mushroom savants!)
3. Sprinkle chopped parsley or chives over steaks. (Simple and colorful.)
