Braised Bison Steaks
1/4 cup flour
Combine flour, salt, pepper. Coat chops with the flour mixture. Melt fat in heavy fry pan. Add steaks; sauté until well browned on both sides. Add liquid, then cover and simmer for about 45 minutes or until meat is tender. Remove steaks to hot platter; remove pan from heat.
Combine flour and cold water to make paste; add 1/4 cup liquid from pan to paste. Stir paste into remaining liquid. Return to heat, stirring constantly until gravy bubbles. Add seasoning to taste; pour over steaks. Serves four.
