Health-consious? Beef Short Rib Recipes From Grassfed Cows Will Satisfy

OK, beef short rib recipes are not the most prized. They're bony, and they don't always top the menu at the world's fanciest restaurants. But they are tasty. And they're tender if cooked right. (We recommend low and slow for grassfed meat. But here comes the big plus. If they're grassfed, they're healthful, no bones about it!

Ingredients:

2 pounds beef short ribs, cut into 3 inch pieces
1 clove garlic, peeled, cut in half
2 Tablespoons flour
2 teaspoons salt
1/2 teaspoon pepper
2 Tablespoons butter
1-1/2 cups boiling water
1 large onion, sliced

Procedure:

Rub each short rib with cut side of garlic. Combine flour, salt, pepper and pour mixture into paper sack or bread bag. Drop meat into sack or bag and shake vigorously to completely coat meat.

Melt butter in heavy skillet. Add meat and brown on all sides. Add water and sliced onions. Cover, cook on low heat for about 2 hours or until meat easily falls off bones when touched with a fork. Serves four.
