A Basic Pancake Recipe Loaded With Imagination (Toppings) Beats A Boring Breakfast

Looking for a basic pancake recipe?

This is one of the simplest pancake recipes I know. It's simple and tasty. I make it for myself or our family about once every couple of weeks. I like pancakes and one of the joys of breakfast is to prepare pancakes and load 'em with all sorts of toppings. We always use butter. Sometimes sour cream too. Blueberries are great. Strawberries--Ummmmm! Any kind of berries add interest, color and pleasure to the meal. Sometimes we even load the cakes with ice cream! The skies the limit for your imagination.

Ingredients:

2 cups flour
2 well-beaten eggs, preferably from grassfed hens
2 cups milk, preferably from grassfed cows
4 tablespoons olive oil (or melted butter)
1 teaspoon baking powder
1-2 pinches salt

Procedure:

Place all ingredients together in a mixing bowl. The order does not seem to matter. Mix until lumps are mostly gone. Heat slightly buttered or oiled griddle (or heavy skillet) evenly. Not too hot or your kitchen will get really smokey really fast.) Pour about 1/4 cup pancake mixture onto griddle. Cook until bubbles appear on pancake. Flip over to other side and cook until lightly browned.

Serve immediately with all sorts of toppings.

Note: You can use any kind of milk or eggs or oil. I recommend the listed ingredients for the health benefits.
