Pork loin roast, preferably pasture raised
Salt and pepper
Pinch of sage

Season with salt and pepper. Place roast with fat side up on rack in open roasting pan. Insert meat thermometer into center of roast. Place in 300 degree F oven and roast about 30 minutes per pound. The meat thermometer should register about 145-165 degrees F when done.

Make gravy from drippings. A pinch of sage will season this recipe for pork loin roast just right.


Prune Recipe for Pork Loin Roast

Ingredients:

Boneless pork loin roast, about 3 pounds, preferably pasture raised
1 small can cooked prunes
2 garlic clove, minced
2 tablespoons olive oil
½ teaspoon crushed, dried rosemary
2 tablespoons canola oil
Salt and freshly ground black pepper

Procedure:

Choose a pan or bowl about the size of the roast. Mix the garlic, rosemary and olive oil in the container. Add the pork roast; rub with the marinade. Let stand for 2-3 hours.

Preheat oven to 400 degrees F. In a heavy skillet heat the canola oil until smoking hot. Season pork roast with salt and pepper. Place the pork roast into the hot oil (Be careful of splashes!). Cook until golden brown on all sides. At this temperature it only takes about 5 minutes.

Pour off the oil. Place pan in oven and cook until roast reaches internal temperature of 145-165 degrees F. Remove and let stand a few minutes to facilitate carving. Pour prunes over carved roast for a delicious meal.

Ingredients:

Pork loin roast, preferably grassfed, about 3 pounds
Salt
Freshly ground peppercorns
1 can crushed pineapple

Procedure:

Season with salt and pepper. Place roast with fat side up on rack in open roasting pan. Insert meat thermometer into center of roast. Place in 300 degree F oven and roast about 25-30 minutes per pound. The meat thermometer should register about 145-165 degrees F when done. Do not overcook.

Pour crushed pineapples over roast and serve. Serves about 6 people.

Variations of recipes for pork loin roast abound. Get creative. You might try various marinades. Or better, try caramelized apples, applesauce or raspberries as sauces over the cooked roast.
