Baked Egg Recipes Require Little Attention




One of the easiest methods of preparing eggs is baked egg recipes. Even so, they are seldom tried.

The advantages are several. The dry heat penetrates slowly, and the eggs cook evenly from both top and bottom; almost no attention need be given to baked egg recipes.

It is usually recommended that eggs be baked in custard cups, which are a nuisance to oil, handle, and wash. Bake them directly in a covered frying pan, or a baking dish, or in poaching rings.

Baked Egg Recipes

Heat frying pan or baking dish to moderate temperature; brush lightly with oil or fat and break into it:

4-8 eggs from free-range hens

Sprinkle with salt and freshly ground peppercorns; place in a preheated slow oven at 325° F. and bake for 15 to 18 minutes.

Variations:

If oven is in use, add 2 or 3 tablespoons water or milk, cover utensil, and let eggs steam in the oven; substitute for frying or poaching eggs.

After egg white has set, lay slices of bacon across the top, or cover the eggs with 1/2 cup grated cheese and/or 3/4 cup barbecue sauce.

Sprinkle grated American cheese over eggs and serve in indentations made in mound of cooked spinach.

Baked Egg recipes in bacon rings: Fasten bacon into rings with toothpicks; drop an egg into each ring; bake as in basic recipe.

Baked Eggs in meat cups: Pan-broil for 1 minute at high temperature thin slices of bologna or any luncheon meat, making them curl into cups; drop an egg into each cup, bake, and serve with cheese sauce or mustard sauce. Vary by baking eggs on slices of ham; or serve ham slices on toast, broiled tomato slices on ham, and baked egg on top of tomato; cover with any cream sauce.

Baked Eggs with leftover meat: Combine 1 1/2 cups ground leftover meat, 1/2 cup whole-wheat-bread crumbs, 1 teaspoon salt, freshly ground pepper-corns, 3/4 cup gravy or milk; put meat in flat baking dish, make indentations to hold eggs, and bake as in basic recipe.

Baked Eggs with rice or noodles: Put leftover rice or noodles into oiled casserole; made depressions with tablespoon, place egg in each depression, season and bake. Cover with shredded cheese or serve with cheese sauce.

Baked Eggs with sausage: Shape large sausage cakes with a hollow in the top side; bake cakes slowly 10 to 12 minutes; drop eggs into hollows and bake. Or arrange link sausages in circles, drop an egg into each circle, season and bake.

Baked Eggs with sauce: Break the eggs into baking dish; bake; prepare any cooked sauce and pour over eggs before taking from oven.




Baked Egg Recipe with Cheese and Mushrooms

8 slices bread (crusts removed)
12 eggs (beaten) from free range hens (if you can find them)
4 cups milk
1/2 teaspoon salt
2 teaspoons mustard
1/2 green pepper, chopped
1- 4 ounce can mushrooms or 3/4 cup fresh mushrooms, sliced
1 lb. Velveeta cheese slices
1 lb. ham or bacon (fry bacon)

Place bread slices in a greased 9 x 13 inch pan. Mix eggs, milk, salt, mustard, ham or bacon, green pepper and mushrooms. Pour over the bread slices. Cover with cheese slices. Refrigerate overnight. Bake at 350 for 1 hour. Serves 12.
